Using traditional Yukimuro aging, the low-temperature, high-humidity, oxygen‑limited environment allows slow, gentle maturation, delivering an exceptionally smooth, mellow flavor with reduced bitterness and acidity, enhanced sweetness and aroma, and an eco-friendly production process.
